Arugula Salad

If we’re talking summer greens, arugula is at the top of our list. Those light tender leaves with their distinctive pepperiness remind us of the blue skies and sunny shores of the Italian Amalfi coast (we all wish we could get there someday), where arugula reigns supreme. Arugula is a great addition to lots of dishes, from steak sandwiches to farro salads to ravioli, but here we’re honoring it by featuring it all by itself in a super simple salad. Can I add other ingredients to the salad?
We think this salad is great just as it is, but if you want to add some more veggies, we’d recommend complementing the bitterness of the arugula with other bitter greens, like endive or radicchio. You could also add some thinly sliced apple, if you wanted, for some brightness and crunch!
I don’t have shaved Parmesan. Can I use grated instead?
We really like how the flakes of shaved cheese mingle with the arugula leaves, but in a pinch you could use grated instead. Just keep in mind that with a simple salad like this, it’s all about the quality of the ingredients. The better your parm is, the better the salad will be!

Ingredients
For dressing
- 6 tbsp.
extra-virgin olive oil
- 2 tbsp.
lemon juice
Kosher salt
Freshly ground black pepper
- 4 c.
arugula
Shaved Parmesan, for garnish
Directions
- Step 1Make dressing: In a medium bowl, whisk together olive oil and lemon juice, then season with salt and pepper.
- Step 2In a large bowl, lightly dress arugula, then top with Parmesan.
