What is a Calzone?

A calzone is a folded pizza, much like a turnover, that originated in Naples, Italy. It is made with traditional pizza dough and toppings, then baked in the oven. 

A calzone is different from a Stromboli in the way that it is sealed. A calzone is folded in half and sealed on the edges, while a Stromboli is rolled into a spiral and then sealed y folding some of the dough back over the roll.

Ingredients
  

For the dough

  • 1 batch Basic Pizza Dough
  • 1 cup Pizza sauce
  • 1 cup Mozzarella Shredded
  • 2 tbsp Parmesan cheese
  • 1 tbsp Extra-virgin olive oil For brushing
  • 1 pinch Kosher salt
  • 1 pinch All-purpose flour For prep surface

Optional toppings

  • Sliced pepperoni
  • Diced onion
  • Diced green bell pepper
  • Crumbled Italian sausage

Instructions
 

  • Preheat oven to 450 degrees (or equivalent, if using a pizza oven).
  • Grease two large baking sheets with cooking spray.
  • Divide the pizza dough into 4 pieces.
  • Lightly dust your work surface with all-purpose flour.
  • Roll one piece of dough into a 6-8” circle, approximately ¼” thick.
  • Add 1-2 tablespoons of pizza sauce to the middle of the dough round.
  • Sprinkle mozzarella cheese over the sauce.
  • Add toppings as desired, then top with more cheese.
  • Carefully fold the dough in half, then gently press the edges together to seal.
  • Repeat with the rest of the dough.
  • Place the calzones onto the baking sheets.
  • Spread a light coating of olive oil over the top of each calzone.
  • Sprinkle each calzone with parmesan and salt.
  • With a fork, gently poke each calzone two times so that steam can escape while they cook.
  • Place the baking sheets in the oven for 20 minutes.
  • Remove from the oven and cool for several minutes.
  • Serve and enjoy.
